Healthy low fat banana bread recipe


Here is a yummy banana bread recipe I wanted to share for all of you!


Combine in a large bowl:
1 c EACH whole wheat and white flour
1/2 tsp salt (I omit this)
1/2 tsp soda
1 tsp baking powder

Combine separately:
2 lg very ripe bananas mashed
1/3 cup apple sauce
2 eggs
*1/2 c brown sugar or sucanat
1/2 c milk or substitute
zest of a lemon or orange (optional)
2 tsp vanilla or 1 Tbsp dark rum

Mix wet and dry until just incorporated.

Optional: Fold in approximately:
1/2 c chopped walnuts or pecans
1/3 – 1/2 c dark chocolate pieces
1/2 c chopped dates OR apricots OR any of your fave dried fruit
Sprinkle with cinnamon and stevia lightly

How to make it

Pour into a generously greased and dusted loaf pan – any smallish pan will work.
Bake at 350 for about 50 min – a toothpick inserted in center should come out clean.
Wait 10 minutes before removing from pan and placing on a rack to cool.
* For sugar-free or a lower-sugar banana bread, replace the sugar with 1/3c of unsweetened fruit juice concentrate (apple, orange, white grape), agave syrup, maple syrup or honey.

Today I did the Cupid’s cardio on the elliptical and 1 x leg workout and 1 x total body workout

Sunday Night Prep and plans! Active weekend:)

Hi all!

25 days left of the challenge! After, Im going to try a different approach to the blog..more on a helping others but still sharing my life deal!

So its Sunday and I’ve been pretty active all weekend and eating well (some indulgence but not too bad). On Saturday I did Amy Dixons Tabata DVD ‘breathless body’. Wow what a workout!! Sunday I did interval training on the elliptical. My back has been sore so I did not do much weights this weekend, but nonetheless I stayed active!

Monday: 30 min walk pm plus Pilates
Tuesday: 40 min cardio HIIT Elliptical plus full body toning you tube video (Zuzka)
Wednesday: Jillian killer butt workout
Thursday: Surfer girl and beach booty TIU
Friday: Tabata (amy Dixon Breathless body)
In NYC sat and Sun!

Food plan for the week:

Mon: Coconut lime and chicken quinoa
Tues: Fish
Wed: Turkey little muffins (see last weeks post)
Thurs: Fajitas
Fri: on the road

I cant wait to go to NYC with my hubby this weekend:)

SOOOOO GOOD!! Recipe here: I added all veggies in blender first! I also added spinach!

For dessert I made oatmeal bites! Yummmm!!

I’m so happy with the amount of walking I’ve done!
I did all the TOU challenges today: (2 x full body workout, 2 x leg workout) plus 40 min of interval training!

Tomorrow waking up to arm workout and cardio at night!!!

Challenge check in day 14- Lean, clean and green

Okay so its Monday, okay so I did not get up for my planned workout, okay so I have work and attend ¬†a LONG BORING class today….

I have still eaten to my plan from yesterday…YAY!!!

I have also been walking everywhere and even logged in a lunchime quickie with a co-worker (WALK that is!). I plan on watching a little Hart of dixie and doing some elliptical tonight (30 min) and 3 x sunkissed abs workout found at (as per the challenge).


Tonight they have challenged us to lay of starches and I plan on it! I have also been reading about how to eat to sleep better. Check it out:

Although I snack on healthy fruit at night, turns out I may need to make some adjustments! Also I have finally planned my meals for the week (Dinners which are always hard):

Mon: Quinoa and veggies

Tues: Turkey loafs found here:

 Wed: Porc tenderloin and salad

Thursday: SLow cooker chicken and Salsa:

Friday: TBD!

I also plan on making  some muffins, oatmeal bites:

 and some amazeballs:

On another note my hubby got nominated for an award at work! YAY!

I also had a great experience (in and out in 15 min) at the college bookstore today. I got al my books and Im relieved. Now if only I was prepared for class today:( 

Okay off to class! I will check in with the fitbit stats tonight! Also with my meal planning for tomorrow! Planning is also part of the challenge! I love feeling organized!

Sunday Prep work!

Hi all!

Prepping for a busy week! I made some overnight chocolate oats (half cup oats, half cup almond milt, stevia, cocoa, flax seed and cin to taste) and a batch of Quinio, cut up peppers, feta, avocado, carrots, beans an chickpeas.


Mondays I have school and work so I’m going to sneak in a workout in the am and walk as much as I can during the day.I plan on doing JM killer abs level 2 in the am. The TIU challenged us to eat lean and green for dinner so here is my meal plan for tomorrow:

M1: Overnight oats w banana
M2: greek yogurt with apple
M3: SPinach with tune
M4: Cliff bar with 2 clementines
M5: Quinoa with veggies

Feels good to plan it out!

Weekend check in!

Hey all!

I have had a really packed weekend full of dinner, birthdays and unfortunately a funeral today. …

Makes you appreciate life every day and every special moment! I’ve been in heaven since the hubby came home. Here’s a pic of us at a wedding a few months ago:)


Okay so I won’t go over my meals this weekend. I did eat a lot¬†of¬†fruits and veggies, but I had too much pasta¬†Friday¬†and a whole bunch of chips yesterday, which I really regret!!¬†

Saturday I did 1.5 hours of hot yoga with the hubby and had a soccer game at night. Fitbit stats:

Today (Sunday), ¬†I woke up and did a 30 min HIIT workout. If you follow the TIU girls Karena Dawn is one of the fitness models in the workout I did (Women’s¬†health, look better naked dvd). So funny! She looks different…..I can’t point out what it is though…

I plan on going for a long walk with the dog today! I have to make the 2.2 miles and more from the challenge!!

As for this week my workout plan:

Mon: Jillian M. Killer abs

Tues: TIU Bikini sculpt and 30 min Cardio

Wed: HIIT and Beach Booty

THUR: A ZUZKA workout and cadrio

FRI: Active rest day

SAT: TABATA workout

All my friends and I go this great deal at a gym to try some new classes! I cant wait!!

I need to plan some dinner meals as well! I need some inspiration!! Any help!
